Jamaica

This weekend I went away for a girls weekend on Tamborine Mountain. I decided I’d take the girls to Jamaica. So I prepped some Jerk marinade before heading up then all I needed to do was marinade some chicken then BBQ… that was if we scored a BBQ at our airbnb, but there wasn’t so the oven was the back up plan. We tried cooking some corn in the fire though (yes we had a fire place), but that didn’t exactly work so they ended up in the oven too. Then I cooked some ‘peas and rice’ which is Jamaican code for beans and coconut rice. It was on the spicy side but still delicious.
